Salmon Coconut curry

For Valentines day, I made Salmon Coconut Curry. A hit with my wife and the kids. That’s like going 5 for 5 with a couple of home runs. Here is the great part. It takes about 20 minutes to make from start to finish.

Ingredients:

  • 1 container of Mother’s Kitchen Coconut Curry Masala (Buy!)

  • 1.5 pounds of Salmon fillets

  • 1 14oz can of coconut milk (shaken)

  • 1 cup water

  • cilantro for garnish

Heat up the Coconut Curry Masala with a tablespoon of oil. Add Salmon Fillet. cook for 3 minutes. Add water and cook till salmon is almost at your desired doneness. Add coconut milk and stir gently. Cook till Salmon is cooked. Top with lots of cilantro

Enjoy with rice and naan
